It is used in sandwiches, toast, pasta dishes, soups, salads, etc. However, bread is also prone to collapse during proofing or baking. WebI agree it's slightly underfermented but nothing dramatic. Biggest give away is a few larger holes and mostly small holes. Perfectly proofed bread will have a better distribution between large, medium and some small holes. Overproofed bread will give a flatter bread with less volume and somewhat sticky crumb.
